What to do:
Whisk together 2 and ½ cups all-purpose flour, 2tsp cornstarch, 1/2tsp cream of tartar, 3/4tsp baking soda, 1/4tspsalt and 2tsp cinnamon
In a separate large bowl beat together the 3/4 cup butter, 1/2 cup granulated sugar and 3/4 cup brown sugar until fluffy. Turn the mixer down to low then beat in 1 large egg and 2tsp vanilla extract
Slowly add in the flour mixture. The dough will be very sticky!
Cover the bowl with clingfilm and refrigerate for at least 2 hours (or up to 2 days!)
When ready to bake, take the dough out of the fridge and line 2 cookie trays with parchment paper
Form the dough into balls of about 1.5 tablespoons in size. Bake for about 8-10 minutes
When golden brown, sprinkle with cinnamon and a dab of icing sugar – now top with a Lees’ Snowball and enjoy!!
